A new expression of sake, crafted with 99% kōji
An unprecedented sake made with an exceptional proportion of kōji—99% of its composition.
While traditional sake typically uses around 20%, this cuvée pushes the ratio to the extreme, revealing the full aromatic richness of kōji.
Crafted using the kimoto method and without any additives, it relies entirely on the natural forces of fermentation.
The high kōji content intensifies the umami of the rice, creating a deeper, more untamed flavor profile.
A rich palate where the natural sweetness of the rice meets a well-structured acidity, achieving balance from the very first sip.
